Tasting Notes: Multiple picks the fruit for this wine allows for fresh acidity and a lovely ripeness spectrum of sauvignon blanc flavours and aromas. Whole-cluster ferment and a small portion of late-picked fruit add weight and texture to the wine.
This complex wine, a result of multiple picks over 4 weeks, is fragrant with spicy green fruit, gooseberry, and melon. Flavours of green apple and green plum merge into intense maracuya, pineapple and guava. This succulent, tangy, refreshing wine has a fine, long finish. Magnificent with oysters, this wine pairs beautifully with seafood.
On the Nose: Grapefruit citrus, ripe tropical characters and delicate floral and herbal notes.
On the Palate: Zingy lime, citrus, white peach and tropical notes are nicely balanced by a mineral acid backbone. This is a wine of vibrant intensity, elegance, and freshness.
Serving: The absolute best pairing is with barely seasoned fresh lightly cooked or raw seafood. It also works with the fresh ingredients of Mexican and Greek food. Serve chilled.
